Baking with apples is one of my greatest pleasure, and a few years ago I came across this alternative to the standard apple pie, a vegan apple cake recipe, I baked it, and loved it ever since.
Being it a vegan recipe, it is perfect for anyone intolerant to dairy or eggs, and it tastes just as wonderful without them. On the contrary, if you don’t ave any problem with dairy and eggs, then you’ll find the non vegan ingredients in brackets.
This apple cake is a soft sponge with a rich taste thanks to the chocolate chips, and the spicy cinnamon notes: comfort food at its best!
Ingredients for my Vegan Apple Cake:
-225g of unsalted margarine or vegetable spread (Of butter for the non vegan option)
-175g soft light brown sugar – Demerara sugar works perfectly
– 300ml of oat drink (3 medium egg if you want to go for the non vegan option)
– 2 tbsp malt extract
– 225g wholemeal flour
– yeast
– 2tbsp milk (oat drink)
– 400g Royal Gala apples peeled and diced
– 2 Dessert apples peeled and tiny sliced
– ½ tbsp ground cinnamon
– 1 tbsp caster sugar
– 1-2 tbsp clear honey
– 100g of dark chocolate cut in small pieces
First preheat the oven to 170 C. Secondly beat the margarine (or the butter, if you are going for the non vegan version) and sugar together, until fluffy and light in color. Then gradually beat in the oat drink (or the eggs) little at a time.
As a third step, with a large spoon fold in the flour and yeast (sifted to avoid lumps), then the milk and the diced apples, the chocolate pieces, and mix it gently.
Fourthly turn into the tin and level it. On the side toss the dessert apples in a mixture of sugar and cinnamon, and then carefully overlap them in a circle on top of the cake batter.
Bake for 45 minutes to 1 hour, until inserting a skewer it comes out clean.
Let it cool for a few minutes and , as a last step, brush the cake with the honey. Serve it warm with a non-dairy coconut ice cream scoop. There you have it, your scrumptious vegan apple cake, now you just have to enjoy it!
As a last note: if you are going with the non vegan version, clotted cream or vanilla ice cream will do nicely to accompany your cake!
